Jose Santos, born in Brasilia, Brazil’s capital city has spent the last 9 years cooking up carnivores delights, pleasing many Sydney’s pallets and satisfying the fussiest of meat connoisseurs as head chef at Sydney’s Wildfire restaurant.
The king of BBQ likes to keep things simple in the kitchen by using basic, simple but tasty and natural ingredients. Meat is natural and organic and should be enjoyed cooked in its simplest form. Good quality products it is the secret of a great dish! He’s known for transforming traditional Brazilian dishes in to mouth watering, unforgettable dinning experiences and he has surrendered to the enormous task of shaping the Brazilian food culture in Sydney through ingredients that are interpreted through his dishes.

Balu Gimenez was born in Sao Paulo, Brazil. Graduated University with a Bachelor’s degree in marketing and publicity.
Balu came to Australia in 2006 and brought with him 9 years experience in events management and marketing roles.
Since then he has continued his love for events and added several years of experience working in the Australian wholesale meat industry.
Today, Balu is one of the prominent personalities and entrepreneurs in Sydney’s thriving Brazilian community, producing several Brazilian/Australian events and festivals, utilizing his creative skills coupled with a highly motivated work ethic.
He brings the essentially energy and experience which makes Barbicrew a success.
